This version of potato bake puts a healthy twist on the Ultimate Comfort Food with some extra veggies mixed in there. It’s a gluten and dairy free potato bake, balanced with protein and full of fibre and healthy fats to keep you full.
(And don’t be scared by the coconut milk it doesn’t taste coconutty at all)

Ingredients
- 3 medium brown potatoes
- 1 medium sweet potato
- 2 medium swede
- 1 onion diced
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1 can full fat coconut milk* make sure it's good quality.
- 200 grams bacon diced
Instructions
- Preheat oven to 180°C and lighty grease a baking dish.
- Brown the diced bacon and onion in a lightly oiled pan then add coconut milk and bring to the boil (a couple mins).
- Meanwhile cut potatoes and swede into thin slices (using a mandolin is quickesand layer half of the veggies in the baking dish.
- Pour half of the coconut milk/bacon mixture over veggies in dish. Layer the rest of the veggies and pour remaining mixture on top.
- Bake in oven 50 minutes.
