Lemon Barramundi with Potatoes and Greens

I’m always looking for a different ways to incorporate more fish into our weeks and this Barramundi was amazing! The lemon and ghee (can sub for olive oil or butter) + crispy potatoes + greens = the best flavour combo ever! Minimal effort and minimal clean up like all my 1 tray dinners.

Depending on size of fish you can get 2-4 serves – just adjust veggies and fish to suit how many you’re serving, and you could add a side of rice.

*Always opt for wild caught fish avoiding the farmed stuff if possible,

Lemon Barramundi with Crispy Potatoes and Greens

Ingredients

  • 1 Large Fillet/Whole Barramundi (or other white flesh fisenough for 2-3 people
  • 3 Potatoes
  • juice of 1 lemon
  • 2 tsp dried mixed herbs
  • 1 tbs ghee butter or olive oil
  • 1/4 tsp onion powder
  • 1 Cup Green Beans
  • 6 Asparagus Spears
  • 2 garlic cloves minced

Instructions

  • Preheat Oven to 200C and line a baking dish. Chop Potatoes into small pieces, brush with some of the ghee/butter and coat with mixed herbs. Add to baking dish and set timer for 20minutes.
  • Coat Barrumundi and greens with remaining ghee/butter, lemon juice, garlic cloves and onion powder. Once potato timer goes off, add fish, asparagus and green beans to baking dish with potatoes and cook for 20minutes.

Notes

*Adjust baking time for fish if cooking smaller fillets.
