This healthy crumble takes just five minutes to prepare, 30minutes to bake and is a delicious breakfast, snack or dessert. Full of fibre, protein, antioxidants and energy boosting minerals, it’s the perfect healthy swap for the usually sugar laden crumble.
Healthy Apple Blueberry Crumble
Servings: 5 serves
Ingredients
Apple Blueberry Mixture
- 3 Cups Chopped Apples into small cubes preferably organic
- ½ cup Blueberries preferably organic
- 1 tbs stevia or 100% maple syrup
- 1 tbs coconut oil
- 1 tsp vanilla
- 1 tsp cinnamon
Crumble Mixture
- 1 ½ cups of oats or can use almond meal
- 1 tbs coconut flour
- ½ cup shredded coconut
- 1-2 TBS vanilla pea protein powder or other plant based
- ¼ cup pumpkin seeds
- 2 TBS coconut oil
- 1 TBS water
Instructions
- Directions: Mix all apple blueberry ingredients together then pour into a baking dish.
- In a blender pulse crumble ingredients then pour into bowl and rub together/scrunch with your fingers to make it stick together. Pour crumble on top of apple blueberry mixture and lightly press on top. Bake in oven at 180 for 30mins or until top is golden.
