Honey Mustard One Tray Bake

Ingredients
- 2 Large Chicken Breasts
- 2 cups sweet potato
- 1 medium zucchini.
- 4 cups of spinach
- 2 Tablespoons extra virgin olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- 2 tbsp Dijon mustard
- 1 cup cauliflower
- 1 cup quinoa
Instructions
- Line a baking tray and Preheat oven to 180 degrees.
- Chop sweet potato, zucchini and cauliflower into small pieces, add to tray and lightly spray with olive oil.
- Slice chicken breasts in half (or use 4 smaller sized) and add to the tray.
- Mix olive oil, mustard, honey and garlic in a bowl and pour over the chicken.
- Bake for 25-30minutes.
- After adding tray to oven, rinse quinoa well and put in saucepan with water to cook (follow pack directions).
- Remove tray from oven and pour spinach leaves on top and let them slightly wilt from the heat. Serve on top of quinoa.
