Yellow Chicken Curry

Servings: 4 serves
Ingredients
- 2 Tablespoons Yellow Curry Paste⠀
- 1 Can full fat coconut milk⠀
- 1 small onion diced⠀
- 1 small head broccoli⠀
- 2 carrots⠀
- 1 small sweet potato⠀
- 500 g Chicken Thigh or Breast⠀
- 2 Cups Brown Rice or what you need for your family⠀
Instructions
- – Wash Brown Rice and put on to cook.⠀
- In a fry pan heat a little olive oil, curry paste and onion for a couple of minutes.⠀
- – Add coconut milk and bring to the boil⠀
- – Meanwhile chop chicken then add to fry pan⠀
- – While chickens cooking roughly chop vegetables. ⠀
- – Turn heat on low, add vegetables and simmer for 5-10minutes until veggies are just softened. ⠀
- Rice will be ready. Top with coriander to serve.
