I am a little obsessed with one dish dinners – especially in that first 6 months postpartum and here’s why:
+ You can get them prepped in under 10minutes (most of these in 5 minutes!) This makes it perfect for the days you literally don’t have hands free time or energy is at a zero.
+ They’re Healthy, well balanced and taste amazing
+ The oven doe the work for you
+ There’s one dish to clean.
Honestly, one dish dinners have saved me from ordering take out food at least 100 times in the last 3 years haha! Trust me, once you start you’ll be hooked!

Coconut Chicken Quinoa Casserole
Yes, you can cook quinoa in the oven! A great way to mix your dinner up from the usual with this family favourite.
Pumpkin lentil cauli korma
One of my original one dish dinners that I still LOVE. Pre-chop and freeze your pumpkin at the start of the week to make this a 2 minute dinner prep!
Sun-dried Tomato No Boil Pasta Bake
This one legit takes 5 mins to prep and is perfect for the nights you're craving pasta! (No pre-boil required!)
Spring Harvest Frittata
Super easy! Keeps well in the fridge for 3-4 days or if you want to double batch, freeze one for next week.
Oven Baked Chicken Korma Curry
I LOVE oven baked curries. The flavour is great, the veggies are soft and it's so ridiculously easy.
