Another easy pantry meal ready in just 5 Minutes! This works for Breaky, Lunch or Dinner and is the best healthy comfort food the whole family will love. Perfect for a quick meal prep to use for breakys or quick meals throughout the week.

4 Bean Breaky Bowl w Avo

A super simple pantry meal that comes together in 5 minutes! Store in an airtight container in the fridge for a few days worth of easy breakfasts or meals.

Ingredients

  • 400 g tinned crushed tomatoes
  • 400 g tinned black beans
  • 400 g tinned kidney beans
  • 400 g tinned butter beans
  • 400 g tinned cannellini beans
  • 2 TBS tomato paste
  • 1 onion diced
  • 1 tsp ground cumin
  • 2 cloves garlic minced
  • 1/2 cup water bone broth or stock.
  • 1 TBS olive oil
  • Salt to season.
  • 1/4 Avo per person.

Instructions

  • Heat a medium saucepan on high, add olive oil, onion and garlic, cooking a couple minutes until onion is soft.
  • Add rest of ingredients and stir until well combined and hot. Season with salt and serve with Avo.
  • Extra serving suggestions: GF toast, rice or eggs.
