30 Minute Meal Prep Frittata and Quinoa Salad

Meal prep doesn’t always have to be a complicated endeavour. If you’ve got 20-30 minutes, you can have this weeks lunches taken care of (including clean up!) while you let the oven do most of the work for you. That’s one less thing to think about this week.

Meal Prep Steps

Meal Prep Italian Frittata with Simple Quinoa Salad

1. Preheat Oven to 180

2. Wash and Put Quinoa on to Cook

3. Frittata

  • Lightly brown sausage and onion. Combine all frittata ingredients in lightly greased rectangular dish and put in oven with timer set to 40-50mins (check at 40).

6 Ingredient Italian Frittata

A simple gluten and dairy free dish that can be prepped in under 10 minutes then the oven does the cooking. Perfect for an easy dinner or a meal prep dish!

Ingredients

  • 4 organic sausages (I used Cleavers Brand)
  • 3-4 tbsp Dried Mixed Italian Herbs
  • 3 cups organic spinach
  • 1 cup chopped organic cherry tomatoes
  • 1 onion, diced
  • 10 eggs

Instructions

  • Preheat oven to 180°C
  • Cut sausages into small pieces and lightly brown in a touch of olive oil in a fry pan (about 5 minutes)
  • Add all ingredients to a lightly greased dish 
  • Bake in the oven for 50-60minutes

4. Take quinoa off heat, fluff with a fork and set aside. 

5. Simple Quinoa Salad

  • Mix all ingredients together. Spoon into containers, leaving a space for frittata and add slice of lemon and avocado if you like (I find it best to wait til the day I’m eating it to cut avo but you can squeeze lemon juice on top to avoid browning for 1-2 days).

Simple Quinoa Salad

A fresh and summery quinoa salad that goes well with any main dish.

Ingredients

  • 1 bunch flat leaf parlsey finely chopped
  • 2 cups uncooked quinoa
  • 1 cup cherry tomatoes
  • spinach leaves

Dressing

  • juice from 1 lemon about 1/4 cup
  • 1 TBS tamari
  • 1 tsp honey or maple syrup

Instructions

  • Wash and Cook Quinoa
  • Mix dressing ingredients in a small bowl
  • Chop parsley and cherry tomatoes
  • Let quinoa slightly cool then stir all ingredients together.
  • Serve with Avocado and extra parsley. 

6. Wash up – (pan, saucepan, cutting board, blender etc – should only take a few mins).

8. Go put your feet up until frittata is done. Once it’s ready let it cool before slicing.

9. Slice fritatta and pop into containers with quinoa salad, lemon slice and avocado. Store them and the fridge and clean the last dish (yay for no big pile of dishes!).

Easy Right? You’ll get 4-6 Meals out of this depending on portion sizes.

Storage: Best eaten within 5 days (I find it tastes best up to 4 days).

  • 10 Eggs
  • 2 small onions
  • 1 pack of quinoa (need about 2 cups uncooked)
  • Organic Sausages
  • Mixed Italian Herbs (dry)
  • Cherry Tomatoes
  • Bunch of Parsley
  • 4-5 cups of spinach or leafy greens
  • 1 lemon
  • Tamari (gluten free soy sauce)
  • 2 Garlic Cloves (or garlic powder)
  • Extra Virgin Olive Oil
  • Honey or Maple syrup
  • Avocados
